Pesto Eggs with Avocado

Ingredients

- 1/2 avocado, sliced
- 4 tbsp Black Swan Chunky Basil &
- Cashew Pesto
- 2 eggs
- 2 slices sourdough bread, toasted
- Crumbled fetta, to top

Method

  1. Bring a medium frypan to medium-high heat.
  2. Spoon the pesto into the hot pan and crack the eggs on top. Cook sunnyside up to desired liking.
  3. Top the toasted sourdough with sliced avocado and top with the fried eggs. Top with crumbled fetta.
